Guest guest Posted October 10, 2000 Report Share Posted October 10, 2000 * Exported from MasterCook * Chili Pizza Recipe By : The Vegetarian Chili Cookbook, by Robin Robertson, p. 121 Serving Size : 1 Preparation Time :0:00 Categories : Breads Pizza Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 teaspoons active dry yeast 1 pinch sugar 2/3 cup warm water 1 1/2 cups all-purpose flour 1/2 teaspoon salt 2 tablespoons olive oil 2 cups prepared chili 1 cup grated Monterey jack or soy cheese Additional toppings can include chopped jalapenos, sliced olives, or chopped onion. Dissolve the yeast and sugar in the water. In a food processor, mix the flour and salt in short pulses. Pour in the dissolved yeast while the machine is running, and pulse it on and off a few times until the mixture is crumbly. With the machine running, add the olive oil and process for a few more seconds. If the dough is too moist, add one or two more tablespoons of flour. Process until the dough forms a ball. Knead the dough ball with the blade for a little less than a minute. Place the dough in a large, lightly oiled mixing bowl, cover and let it sit for 45 minutes, or until it doubles in size. Preheat the oven to 450F. Punch down the dough, knead it about 10 times, and flatten it into a circle about 14 " in diameter. Stretch the dough onto a pizza pan or cookie sheet dusted with cornmeal. Spread the chili over the dough, sprinkle it with the grated cheese, and arrange any additional toppings over that. Place the pizza on the lowest oven rack, and bake for about 20 minutes, or until the crust is golden.
