Chili Margarita

1 tablespoon olive oil

1 large onion -- chopped

1 carrot -- chopped

1 red bell pepper -- chopped

1 28 oz can crushed tomatoes

3 tablespoons hot chili powder

1/2 teaspoon salt

1/8 teaspoon freshly ground pepper

1/3 cup tequila

3 tablespoons fresh squeezed lime juice

1 cup water

4 cups cooked pinto beans

2 tablespoons minced scallions -- for garnish

2 tablespoons minced parsley -- for garnish

 

Heat the oil in a large chili pot over medium heat. Add the onion, carrot, and

bell pepper, cover, and cook until the onion is softened, about 5 minutes. Add

the tomatoes, chili powder, salt, and pepper. Stir in the tequila, lime juice,

water, and pinto beans. Bring to a boil, lower the heat, and simmer 30 minutes,

stirring occasionally. Serve garnished with the scallions and parsley.
