Old-Fashioned Rice Pudding

4 cups White Wave Silk Soymilk

1/4 cup short grain brown rice

1/4 cup granulated sweetener of your choice or

Sucanat, or 3 tablespoons honey

1/4 teaspoon salt

1/3 cup raisins or currants (optional)

nutmeg or cinnamon

 

Preheat the oven to 300F.

 

Pour the soymilk, rice, sweetener, salt, and raisins into an oiled, 2-quart

casserole.

 

Sprinkle the top of the mixture with the nutmeg or cinnamon.

 

Bake the pudding for 20 minutes, then stir. Bake uncovered for 2 1/2 hours if

made in a metal pan, 3 hours if glass or ceramic. The pudding will seem a bit

runny, but it will thicken up as it cools.

 

Serve plain or with fruit, fruit syrup, or maple syrup. You can add many

optional ingredients to this basic recipe: vanilla or other extracts, rum or

liqueurs, grated citrus zest, other dried fruits such as apricots, or 1/2

teaspoon coconut extract.
