Beer Chaser Chili

1 1/2 tablespoons safflower oil

6 tablespoons ground dried red chiles

1 tablespoon ground cumin

3 garlic cloves -- chopped fine

2 medium onions -- chopped

1 teaspoon dried oregano -- preferably Mexican

1 teaspoon paprika

1 tablespoon cider vinegar

12 ounces beer

4 ounces canned diced green chiles -- drained

3 cups cooked pinto beans

14 ounces canned stewed tomatoes

12 ounces ground beef alternative -- see note

1 teaspoon hot pepper sauce

1 cup water

Salt and fresh-ground black pepper -- to taste

 

Beer is an ingredient in this hot and hearty chili, but it also makes a

great chaser to have on hand to douse the fire of this incendiary

dish. The cooked ground beef alternative is especially flavorful in this

recipe. If ground dried chiles are unavailable, substitute a chili powder

blend, cutting back on the additional cumin according to taste.

 

Heat the oil in a large chili pot over medium heat. Add the ground chiles,

cumin, garlic, and onions. Cover, and cook until softened, about 5

minutes. Add the oregano and paprika, and stir to coat. Add the vinegar,

beer, diced chiles, pinto beans, tomatoes, ground beef alternative, hot

pepper sauce, water, and salt and pepper. Bring to a boil, lower the heat,

and simmer, uncovered, for 45 minutes, stirring often.

" precooked " or already browned.
