Hot Chili Powder

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 dried cayenne chiles

stems and seeds removed

4 dried ancho chiles

stems and seeds removed

1 tablespoon cumin seeds

1 teaspoon dried oregano -- preferably Mexican

 

Use this as a guideline and experiment with different types and amounts of

chiles to create your own signature blend.

 

Cut the chiles into small pieces and place in a blender or spice mill,

along with the cumin seeds and oregano. Grind into a fine powder Store in

an airtight container in a cool, dry place.
