Cook the pasta al dente. Drain and rinse under cold water. Drain very well again. Toss noodles with 2 tablespoons of sesame oil using your hands. Cover and chill up to 24 hours. Make sauce by combining remaining 2 tablespoons of sesame oil with other ingredients except cucumber, scallions, cilantro, carrots, water chesnuts, chicken and peanuts. If trying to combine cold sauce with noodles, it sometimes helps to BARELY warm the sauce in the microwave before tossing with it with the noodles. Just before serving, gently toss the noodles with the sauce, cucumber, scallions, cilantro, carrots, water chesnuts, and peanuts. - - - - - - - - - - - - - - - - - - - Per serving: 449 Calories (kcal); 20g Total Fat; (39% calories from fat); 15g Protein; 53g Carbohydrate; 0mg Cholesterol; 761mg Sodium Food Exchanges: 3 Grain(Starch); 1 Lean Meat; 1 Vegetable; 0 Fruit; 3 1/2 Fat; 0 Other Carbohydrates NOTES : Use natural style peanut butter.
