Microwave Tapioca

1/2 cup small or medium pearl tapioca

1 cup White Wave Silk Soymilk

3 cups White Wave Silk Soymilk

1 1/2 cups sweetener of choice, or to taste

2 teaspoons vanilla

 

Soak the tapioca in 1 cup soymilk overnight.

 

Pour 3 cups soymilk into a 2-quart glass bowl or measuring cup. Add the soaked

tapioca and sweetener with a whip. Microwave on high for 6 minutes, and stir

thoroughly with a whisk.

 

Microwave on high again for 2 minutes, whip, and microwave 2 more minutes.

Don't let it boil over. Whip in the vanilla and pour into individual serving

dishes or a serving bowl. Serve warm or chill and serve.
