Spaghetti Primavera

Marinade

2 tablespoons tamari soy sauce

2 tablespoons wine vinegar

1 tablespoon oil

1 pound White Wave firm tofu -- cut into 2 x 1/2 x 1/8-inch

pieces

1 tablespoon oil

4 cups fresh or frozen broccoli florets

1 1/2 cups sliced fresh mushrooms

1 tablespoon oil

1 pound spaghetti or vermicelli

Sauce

1/3 cup unbleached white flour

2 cups White Wave Silk soymilk or reserved

cooking water

1/2 cup chopped fresh parsley

1 1/2 teaspoons salt

1/2 teaspoon garlic powder

1/8 teaspoon cayenne

 

Combine the tofu and marinade, and marinate for at least 2 hours. Brown the

tofu in 1 tablespoon oil and the leftover marinade. Set aside.

 

In 1 inch of water, boil the broccoli and peas until almost tender. Drain and

reserve the water.

 

Saute the mushrooms in 1 tablespoon oil.

 

Cook the noodles until tender, and drain.

 

To make the sauce, combine 1/3 cup oil and the flour, and let bubble together

over low heat for 3 minutes. Whisk in the 3 cups liquid without making lumps.

Whisk in the parsley, salt, garlic powder, and cayenne. Continue cooking over

low heat, stirring until thickened and smooth.

 

Add the tofu, vegetables, and mushrooms to the sauce, and serve hot over the

noodles.
