Guest guest Posted October 6, 2000 Report Share Posted October 6, 2000 * Exported from MasterCook * Spaghetti Primavera Recipe By :Soyfood Recipes for the American Table - White Wave Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Marinade 2 tablespoons tamari soy sauce 2 tablespoons wine vinegar 1 tablespoon oil ***************************** 1 pound White Wave firm tofu -- cut into 2 x 1/2 x 1/8-inch pieces 1 tablespoon oil ***************************** 4 cups fresh or frozen broccoli florets 1 1/2 cups sliced fresh mushrooms 1 tablespoon oil ********************************* 1 pound spaghetti or vermicelli Sauce 1/3 cup unbleached white flour 2 cups White Wave Silk soymilk or reserved cooking water 1/2 cup chopped fresh parsley 1 1/2 teaspoons salt 1/2 teaspoon garlic powder 1/8 teaspoon cayenne Combine the tofu and marinade, and marinate for at least 2 hours. Brown the tofu in 1 tablespoon oil and the leftover marinade. Set aside. In 1 inch of water, boil the broccoli and peas until almost tender. Drain and reserve the water. Saute the mushrooms in 1 tablespoon oil. Cook the noodles until tender, and drain. To make the sauce, combine 1/3 cup oil and the flour, and let bubble together over low heat for 3 minutes. Whisk in the 3 cups liquid without making lumps. Whisk in the parsley, salt, garlic powder, and cayenne. Continue cooking over low heat, stirring until thickened and smooth.
