I came across this last month, and I seem to remember Danell saying she liked

B & B Pudding.

I hope I remembered right. Either way, enjoy.

Bread and Butter Pudding with dried apricots

150 grams dried apricots

6 slices white bread

6 tablespoons butter -- softened

3 eggs

2 tablespoons sugar

1 cup cream

1 cup milk

1 vanilla pod

 

Cover the apricots with boiling water and allow to stand and soften for at least

an hour. Preheat the oven to 180C. Lightly butter a deep oven-to-table dish

approximately 30cm x 15cm. Cut the crusts off the bread and generously butter

each slice of bread. Drain and chop the apricots. Place a layer of bread

slices in the dish and cover with the apricots. Place the remaining slices on

top, arranging in a neat pattern. In a bowl beat together the eggs, sugar,

cream and milk and pass through a sieve. Slit open the vanilla pod, scrape out

the seeds, and add to the egg mixture. Pour this mixture carefully and evenly

over the bread. Place the dish in a bain-marie (a larger baking dish of hot

water) and cook in the oven for about 35 minutes, or until set. Remove, cool a

little and lightly dust with icing sugar, or spread 2 tablespoons of apricot jam

on top. Serve with whipped cream. Serves 6-8.
