Hi all, Here is a recipe for a butter spread that is from the restaurant request section of my local newspaper. Spread on what? They didn't say, so I say: spread on bread and on anything we can cram in our mouths! haha PS: I've no idea where the chipotle chili powder can be found outside of the Portland area...but it must be available where you are, too. Brenda * Exported from MasterCook * Sour Cream Scallion Butter (ala Oba! restaurant, Portland, Or) Recipe By :Oba!, Portland, Oregon (Chef Scott Neuman) Serving Size : 0 Preparation Time :0:00 Categories : Spreads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup butter -- softened (1 stick) 2 teaspoons roasted garlic -- (see note) 1/2 teaspoon minced fresh garlic 2 tablespoons sour cream scant 1/4 teaspoon chili powder 1 pinch chipotle chili powder -- (see note) 1/2 teaspoon kosher salt 1 small green onion -- thinly sliced 2 tablespoons minced fresh cilantro Combine the butter, roasted garlic and fresh garlic in a small bowl and whip with an electric mixer until creamy. Add the sour cream, chili powders and salt, and whip at high speed until very fluffy. Add the green onion and cilantro and whip again until well-mixed and fluffy. Refrigerate until ready to serve. Bring to room temperature before serving. Note: To roast a whole head of garlic, peel away the excess papery skin and cut a thin slice off the top to expose some of the cloves. Drizzle top with 1 teaspoon olive oil. Wrap in foil and bake at 375 degrees for about 45 minutes, or until soft. Cool. Of particular delight was the spread served with the bread. It was, according to our server, made up of garlic, green onions and a bit of ground red pepper. I tried to mix these together with butter and it was the second or third worst thing I can remember putting in my mouth. Any chance that you might get the recipe? -- James R.
