Tofu Pumpkin Pie

1 pound White Wave soft tofu

1 cup White Wave Silk Soymilk (plain or vanilla)

1/8 teaspoon salt

3 teaspoons cinnamon

1/2 teaspoon ground ginger

3 cups pureed pumpkin

1/4 teaspoon nutmeg

1/2 teaspoon allspice

1/2 cup liquid sweetener of your choice

1 egg

1 deep dish pie crust

 

Preheat the oven to 350F.

 

Blend the tofu and soymilk until creamy. Combine with all the remaining

ingredients, and mix well. Pour into the pie crust, and bake for 1 hour, or

until set.
