I just received a recipe for a Low-Calorie Pumpkin Custard, and one of the ingredients is 1 envelope of unflavored gelatin. Well since I found out what gelatin actually consisted of (about 6-8 months ago) I refused to use it. I have heard that there are healthier (more natural) products called " AGAR or AGAR AGAR, " and " KANTEN " that is used in place of the gelatin. Does anyone know about these products? Guest guest Posted October 5, 2000 Report Share Posted October 5, 2000 Danell: Agar-agar is made from seaweed and does have gelatinous properties, but it is not the same type of " gel " as " regular gelatin " is. It has much firmer denser quality (not light & " jiggly " ). You would use less than regular gelatin (I have the amounts at home somewhere, but I'm at work right now). You should be able to find agar-agar in Asian grocery stores if you can't find it elsewhere. I recommend that you use a vegetarian " gelatin " . One brand that makes an unflavored version is Kojel. It is available from Pangea at http://www.pangeaveg.com If you have a kosher food store near you, they may sell it there too. Keep in mind though, that most kosher gelatins are NOT vegetarian. Hain has a product called " SuperFruits " that comes in various fruit flavors, but no unflavored. This brand can be found at health food stores and well-stocked grocery stores. Emes used to make not only various vegetarian gelatins, but marshmallows made with it too! The company is out of business though and, so far, there is no source of vegetarian marshmallows that I know of. There are some brands that use non-vegetarian kosher gelatin to make them (one of them being fish gelatin). Good luck!! Karen Substitute for Gelatin Hi All!
