Guest guest Posted October 4, 2000 Report Share Posted October 4, 2000 * Exported from MasterCook * Tempeh Stew Recipe By :Soyfood Recipes for the American Table - White Wave Serving Size : 3 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup chopped onions 3 carrots -- sliced 2 tablespoons sesame oil 1 8 oz package White Wave Organic Wild Rice Tempeh 2 red potatoes -- cut into pieces 8 mushrooms -- sliced 1/4 cup tamari soy sauce 1/4 cup water 1/2 cup apple juice 1 tablespoon fresh grated gingerroot 1/2 teaspoon thyme pepper, to taste Cook the onions and carrots in the sesame oil over medium-high heat for 3 or 4 minutes. Reduce the heat and add the tempeh, potatoes, and mushrooms. Cook and stir for a few more minutes. Add the remaining ingredients and bring to a boil. Lower the heat, cover, and simmer for about 20 minutes. Add more water or apple juice if the stew becomes too thick. If the stew is too salty, you can add water to taste. Serve over brown rice.
