Mediterranean Salad Pita Sandwich

Amount Measure Ingredient -- Preparation Method

1 head Romaine lettuce -- torn into pieces

3 small -- tomatoes diced into

1/2 "

1 English cucumber -- diced into 1/2 "

1 small -- onion diced into

1/2 "

1 green pepper -- diced into 1/2 "

1/2 cup parsley -- chopped

6 radishes -- diced into 1/2 "

1/3 cup olive oil

3 tablespoons fresh lemon juice

1 clove garlic -- minced

1 teaspoon dried mint flakes*

salt and pepper -- to taste

6 pieces Pita bread

4 ounces Feta cheese

 

Combine first 7 ingredients in a large salad bowl.

 

Whisk together the olive oil, lemon juice, garlic, salt, pepper and

mint in a small bowl.

Pour dressing over salad and toss gently to coat. Adjust seasonings.
