Guest guest Posted October 2, 2000 Report Share Posted October 2, 2000 * Exported from MasterCook * Tender Roasted Shallots Recipe By :Patricia Wells at Home in Provence Serving Size : 4 Preparation Time :0:00 Categories : French Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 18 shallots -- ( in their skins) 2 cups milk sea salt to taste 1 tablespoon extra virgin olive oil 1/2 teaspoon red wine vinegar Preheat oven to 400 degree F ( 200 C, gas mark 6/7 ) In a shallow heat-proof and oven proof casserole combine the shallots and milk. Bring to a simmer over medium heat. Cover and simmer on gentle for 10 minutes. Drain the shallots, discarding the milk. Return them to the casserole ish and cover with aluminum foil. Place in the center of the oven and roast until tender, about 35 minutes. Remove from the oven and season with oil and viniger and toss to blend.
