Braised Red Onions

Amount Measure Ingredient -- Preparation Method

6 large red onions -- in their skins

1 tablespoon extra virgin olive oil

4 tablespoons water

sea salt -- to taste

pepper -- to taste

 

Preheat the oven to 275 F ( 135 C, gas mark 2 )

 

Place the onions on a shallow baking sheet and drizzle with oil and

water. Place in the center of the over and bake, basting every 15 "

until soft ( about 2 hours )`

 

To serve, remove the onion skins and either slice or leave the onions

whole.

 

Season with salt and pepper

 

For a spicy onion, drizzle with a few drops of hot oil or vinegar, or

pili pili (page 316)
