Guest guest Posted October 2, 2000 Report Share Posted October 2, 2000 * Exported from MasterCook * Danish Red Cabbage Recipe By :Cooking with the Danes, Astrid Slebsager..pg 52 Serving Size : 8 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 pounds red cabbage 2 ounces butter 2 teaspoons sugar -- ( 2-3 tsp ) juice of 1/2 lemon* 1/4 pint cherry juice** Remove the outermost leaves of the cabbage and quarter the remainder, removing the stem. Shred finely. Melt the butter, stir in the sugar over a gentle heat, add the lemon juice or viniger, a little of the fruit juice and boil up together. Put in the cabbage and turn in the liquid. Cover and steam until tender, about 2 hours, stirring frequently and adding more fruit juice if neccessary. Remove the lid for the last 15 minutes, add a lump of butter and more lemon juice and sugar to taste.
