Marinated Cucumber Salad

 

Recipe By :Eating Well Rush Hour Cookbook, pg. 134

Amount Measure Ingredient -- Preparation Method

2 cucumbers -- peeled

1 tablespoon rice wine vinegar

1/4 teaspoon sugar

cayenne pepper -- to taste

salt and pepper -- to taste

 

Cut cucumbers in half lengthwise. With a teaspoon, scoop out and

discard seeds. Cut the cukes crosswise into 1/4 inch slices. ( This

can be done very quickly using a mandoline )

 

Place in a medium size bowl along with sugar, viniger and cayenne.

Toss to combine. Season with s/p. Refrigerate until serving.
