Triple Soy Cookies - Veg Times

1 cup quick-cooking oats

2/3 cup whole-wheat pastry flour

1/3 soy flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/3 cup soy nut butter

2 tablespoons vegetable oil

1 cup sugar -- or Sucanat

1/3 cup soy milk

2 teaspoons vanilla extract

2/3 cup semisweet chocolate chips

1/3 cup walnuts -- coarsely chopped

 

1. Preheat oven to 350°F. Grease several large baking sheets.

 

2. In a large bowl, mix oats, both flours, baking soda and salt.

 

3. In a small bowl, mix nut butter and oil until well blended. Stir in sugar,

soy milk and vanilla until combined.

 

4. Add milk mixture to flour mixture and stir with a wooden spoon just until

combined. Gently fold in chocolate chips and walnuts. For tender cookies,

don't overmix the dough.

 

5. Drop by large spoonfuls onto prepared baking sheets, spacing 2 " apart.

Bake until set and tops begin to look dry, 13 to 15 minutes. Let cool on

baking sheets 5 minutes before removing to wire racks to cool completely.

 

Makes about 42 cookies.

 

Per cookie:

62 calories; 1 g. protein; 2 g. total fat (1 g. sat. fat); 10 g.

carbohydrates; 0 cholesterol; 42 mg. sodium; 1 g. fiber

 

NOTE: " These rich little cookies are packed with chocolate chips, walnuts,

and the goodness of soy. You can substitute other nuts if you like - try

cashews or pecans. " I especially like this recipe because I can get away with

a few soiled utensils by using the 1/2 tsp. and 1/3 c. measure for most of

the ingredients, " says winner Emily Finch of Brooklyn Center, MN. "
