Tortellini Salad

9 ounces fresh cheese tortellini -- uncooked

2 cups julienne-cut zucchini -- (2-inch)

1 cup cherry tomato halves

1/2 cup chopped red bell pepper

1/3 cup sliced green onions

2 tablespoons grated Parmesan cheese

1/3 cup fat-free red wine vinaigrette

1 teaspoon chopped fresh dillweed

1/4 teaspoon pepper

 

Cook tortellini in boiling water for 6 minutes, omitting salt and fat. Drain and

rinse under cold, running water; drain well.

 

Combine tortellini and next 5 ingredients in a bowl.

 

Combine vinaigrette, dillweed, and pepper in a bowl; stir well. Pour over

tortellini mixture; toss gently. Yield: 6 servings

(serving size: 1 cup).
