Guest guest Posted September 30, 2000 Report Share Posted September 30, 2000 * Exported from MasterCook * Mushroom & Barley Pilaf Recipe By :Fall's Bounty Serving Size : 4 Preparation Time :0:00 Categories : !Good Housekeeping Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 oz dried porcini mushrooms -- about 1/2 cup 2 tbsps margarine or butter 1 med onion -- finely chopped 2 med carrots -- each cut lengthwise in half then crosswise into 1/4 inch slices 2 med parsnips -- peeled, each cut lengthwise in half then crosswise into 1/4 inch slices (about 6 oz each) 8 ozs sliced wild mushroom blend or mixed wild mushrooms -- tough stems removed and discarded and caps thinly sliced 1 1/4 tsps salt 1/4 tsp coarsely ground black pepper 1/4 tsp dried thyme 1 1/2 c pearl barley -- about 12 oz 1/2 c loosely packed fresh parsley leaves -- chopped In medium bowl, pour 3 cups boiling water over dried porcini mushrooms; let stand 10 minutes. With slotted spoon, remove porcini from soaking liquid, reserving liquid. Rinse porcini to remove any sand; coarsely chop and set aside. Strain soaking liquid through sieve lined with paper towel into liquid measuring cup. Add enough water to liquid to equal 4 1/2 cups total; set aside. Meanwhile, in nonstick 5 to 6 quart Dutch oven or saucepot, melt margarine or butter over medium-high heat. Add onion, carrots, parsnips, wild mushrooms, salt, pepper, and thyme, and cook 10 minutes or until vegetables are tender-crisp, stirring occasionally. Add barley and porcini with soaking liquid; heat to boiling. Reduce heat to medium-low; cover and simmer 35 to 40 minutes or until barley and vegetables are tender, stirring occasionally. Stir in parsley.
