Guest guest Posted September 30, 2000 Report Share Posted September 30, 2000 * Exported from MasterCook * Eggs in Spicy Tomato Sauce Recipe By :Fall's Bounty Serving Size : 4 Preparation Time :0:00 Categories : !Good Housekeeping Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ozs italian bread -- 1 loaf 1 tbsp olive oil 1 lb onion -- cut into 1/4 " dice 2 med carrots -- cut into 1/4 " dice 1 celery stalk -- cut into 1/4 " dice 2 garlic cloves -- crushed with garlic press 28 ozs whole tomatoes in juice 1/2 tsp salt 1/4 tsp crushed red pepper 1 tbsp margarine or butter 8 lg eggs 1/4 c loosely packed fresh basil leaves -- chopped Cut loaf of Italian bread diagonally into 1-inch-thick slices. Toast bread slices; set aside. In nonstick 12-inch skillet, heat oil over medium-high heat until hot. Add onion, carrots, celery, and garlic, and cook 12 to 15 minutes or until vegetables are lightly browned, stirring occasionally. Stir in tomatoes with their juice, salt, and crushed red pepper, breaking up tomatoes with side of spoon; heat to boiling over medium-high heat. Reduce heat to low; simmer 5 minutes, stirring occasionally. Stir in margarine or butter. Break 1 egg into a custard cup. With back of spoon, make small well in sauce and slip egg into well. Repeat with remaining eggs. Heat sauce to boiling over medium-high heat. Reduce heat to medium-low; cover skillet and simmer 7 to 10 minutes or until egg whites are set and yolks begin to thicken or until of desired doneness. To serve, place 1 slice bread in each of 4 large soup bowls. Spoon 2 eggs and some tomato mixture over each slice of bread; sprinkle with basil. Serve with remaining bread.
