Yummy Vegetarian Pasta

8 ounces linguine -- or fettucine

1 medium onion -- peeled and chopped

1 clove garlic -- crushed

1/4 pound mushrooms -- trimmed and sliced

1 stalk celery -- sliced

1/4 pound firm tofu -- cubed

2 tablespoons chopped fresh parsley

1/4 cup grated Parmesan cheese

1 14.5 oz can diced tomatoes

1 8 oz can tomato sauce

1/2 cup white wine

2 tablespoons half and half

1 teaspoon dried basil

 

Prepare noodles according to package directions, drain, set aside.

 

Spray large non-stick saucepan with vegetable cooking spray. Sauté onion and

garlic until softened and fragrant (about 5 minutes), add mushrooms and celery

and sauté until mushrooms begin to give up their moisture (another 5 minutes).

Add tofu, stirring to coat, then add parsley, Parmesan cheese, tomatoes, tomato

sauce and white wine; mix well. Simmer for 30 minutes.

 

Combine noodles in a large bowl with half-and-half and basil; toss to coat well.

Pour tomato mixture over noodles; sprinkle with additional Parmesan cheese.

Serve immediately.
