Guest guest Posted September 29, 2000 Report Share Posted September 29, 2000 * Exported from MasterCook * Fresh Shiitake Stir-Fry Recipe By :Soyfood Recipes for the American Table - White Wave Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1-inch cube fresh ginger root -- peeled 2 cloves garlic 1/4 cup mirin 2 tablespoons tamari 1 pound White Wave firm tofu -- cut into 1/2-inch cubes 1/2 cup sliced scallions 1 red bell pepper -- cut into triangles 3 1/2 ounces fresh shiitake mushrooms -- sliced 8 ounces snow peas -- washed and atems removed 1 tablespoon oil Chop the ginger and garlic in a food processor. Add the mirin and tamari, and blend. Pour over the tofu, and let it marinate while preparing the vegetables. Heat the oil in a wok, add the scallions and pepper, and stir-fry 1 minute. Add the mushrooms and snow peas, and stir-fry 1 minute. Add the tofu and the marinade, and stir-fry one more minute. Cover and steam until hot.
