Guest guest Posted September 28, 2000 Report Share Posted September 28, 2000 * Exported from MasterCook * Chili Con Tofu with Beans Recipe By :Soyfood Recipes for the American Table - White Wave Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Tofu Marinade 1/4 cup water 2 tablespoons tamari soy sauce 1 tablespoon peanut butter 1 teaspoon onion powder 1/2 teaspoon cumin 1/4 teaspoon garlic powder XXXXXX 1 pound White Wave firm tofu -- frozen, thawed, squeezed dry, and torn into bite-size pieces XXXXXX 2 tablespoons oil XXXXXX 1 large green bell pepper -- diced 1 large onion -- diced 2 cloves garlic -- minced XXXXXX 2 1/2 cups cooked pinto beans 1 tablespoon chili powder 1 teaspoon cumin 1 teaspoon salt Preheat the oven to 350F. Combine the tofu marinade ingredients, pour over the tofu pieces, and squeeze in so all of the liquid is evenly absorbed. Place the tofu pieces on a cookie sheet spread with 1 tablespoon of the oil, and bake for 20 minutes. Flip them over and bake for 10 more minutes. Remove from the ovenn and set aside. In a heavy soup pot, saute the green pepper, onion, and garlic in the remaining tablespoon of oil until tender. Add the tofu and all of the remaining ingredients, bring to a simmer, and serve hot.
