Greek Salad

Dressing

1/4 cup olive oil

2 teaspoons wine vinegar

1 teaspoon salt

1 teaspoon basil

1/2 teaspoon black pepper

1/2 teaspoon oregano

1 pound White Wave firm tofu -- cut into 3/4-inch cubes

3 tomatoes -- cored and cut into wedges

3 cucumbers -- thinly sliced

1/2 large red onion -- chopped

1/2 cup Greek or black olives

1 head leaf lettuce -- washed, dried, and separated

 

Combine the dressing ingredients, and pour over the tofu cubes. Mariinate for

at least 1 hour, stirring occasionally.

 

Add the tomatoes, cucumbers, onion, and olives to the marinated tofu. Toss and

serve on the lettuce.

 

Variation - Substitute 1/2 pound feta for 1/2 pound of the tofu.
