Pasta with Olive Oil, Garlic and Parsley

 

Recipe By :variations on a " Monday to Friday Pasta " recipe

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1/2 cup Parsley or other Herbs -- chopped

2 cloves garlic -- minced

1/2 cup extra virgin olive oil

salt and pepper -- to taste

1 pound pasta

3/4 cup cheese-(parmasean -- asiago, feta or

blue) grated or crumbled

 

Boil the pasta in salted water. About 5 minutes before the pasta is

done, heat the oil with the garlic in a medium size saucepan over

medium heat. When you hear it sizzling--about 2 minutes, add the

parley and remove the pan from the heat. Toss the sauce with the

pasta, adding salt and pepper and cheese to taste. Serve immediately.

 

NOTE: I freeze fresh herbs and keep them in the freezer

The Blue Cheese version of this is fabulous!
