Guest guest Posted September 28, 2000 Report Share Posted September 28, 2000 * Exported from MasterCook * Pasta with Brocolli, Tomatoes and Pine Nuts Recipe By :Serving Size : 4 Preparation Time :0:00 Categories : Pasta Vegetarian Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 bunch broccoli 6 tablespoons Pine nuts 2 cloves Garlic 2 teaspoons Olive oil 2 teaspoons Butter -- melted 3 large Tomatoes 12 ounces Vermicelli Toast Pine Nuts under Broiler, watch very carefully and stir frequently Steam Brocolli under crisp tender and chop into 1inch pieces. Core and chop tomatoes into medium size pieces. Set aside. Cook pasta until al dente. Rinse with cool and then hot water. Drain and place in serving bowl. Add tomatoes and brocolli. Just before serving.... Pour Butter and oil into glass measuring cup, add crushed garlic. Cook 1 minute in the microwave and pour over pasta and vegetables. Add pine nuts and toss well.
