Shells with Vegetables

Amount Measure Ingredient -- Preparation Method

2 medium Eggplant -- diced

3 tablespoons Olive oil

1 onion -- finely chopped

5 tomatoes -- seeded and chopped

salt

pepper

5 ounces green beans

1 green pepper -- seeded and chopped

1 Yellow pepper -- seeded and chopped

Oregano

1 pound shell pasta

1 1/2 ounces Parmesan cheese

 

Cover eggplant with salt and leave for one hour, drain off bitter

liquid

 

Heat 1 1/2 tablespoons of the Olive oil and cook the onion, garlic,

tomato and rinsed eggplant. Season with salt and pepper.

Steam green beans until just barely tender. Rinse in cold water.

 

Heat the remaining 1 1/2 tablespoons of oil and cook peppers with

oregeno and salt. Mix drained beans with all the other vegetables

and cook 5 minutes or less. Cook and drain pasta. Stir vegetables

with pasta and add in parmasean just before serving.
