Bow Tie Pasta with Wild Mushrooms

Amount Measure Ingredient -- Preparation Method

1 pound Pasta -- (Bow Tie )

3 tablespoons Olive oil

4 cloves Garlic -- crushed

12 ounces Shiitake mushrooms -- sliced

4 tablespoons butter

2 cups broth, stock or water from soaking

mushrooms

salt

3 tablespoons parsley -- chopped

salt and pepper -- to taste

1/2 cup Parmesan cheese -- grated

 

If using dried mushrooms, saok in boiling water for at least 15 "

before using them...save the soaking water to use later.

 

Cook pasta till al dente and set aside.

 

Heat oil in large non-stick skillet and brown garlic. Add mushroooms

and saute until golden, about 10 minutes. Add butter, stock, parsley

and salt and pepper. Cook on medium heat for 5 minutes.

 

Add pasta and mix well, add cheese, toss and serve immediately.
