Pancakes (Vegan)

Amount Measure Ingredient -- Preparation Method

125 g wholemeal flour

50 g soy flour

250 ml soy milk

2 tsps vegetable oil -- plus extra for fryin

lemon juice -- to serve

golden caster sugar -- to serve

 

Sieve the wholemeal and soya flours into a large mixing bowl. Gradually

add the soya milk, whisking vigorously with a fork to prevent lumps

forming, to make a smooth batter. Whisk in the oil. Chill for 30

minutes.

 

Preheat the oven to 150ºC/300ºF/Gas 2. Heat a little oil in a frying pan.

As soon as it is hot pour 2 tablespoons of the batter into the centre of

the pan. Swirl it around to form a thin pancake and cook for 1 minute

until the underside is brown. Turn the pancake over and cook the other

side. Transfer to a warm serving plate and continue until the batter is

finished. Interleave the pancakes with sheets of greaseproof paper and

keep them warm in the oven. Serve with lemon juice and sugar to taste.
