Guest guest Posted September 27, 2000 Report Share Posted September 27, 2000 * Exported from MasterCook * Pumpkin Pie Recipe By :The Magic of Soy - GeniSoy Products Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Filling 2 cups canned or cooked pumpkin 1 cup non-dairy milk 3/4 cup brown sugar 1 scoop Genisoy Natural Vanilla Shake Powder (1/4 cup) 1 tablespoon molasses 1 teaspoon cinnamon 1/2 teaspoon powdered ginger 1/2 teaspoon nutmeg 1/4 teaspoon cloves 1/4 teaspoon salt 1 teaspoon vanilla extract **************** 1 9-inch unbaked pie crust Preheat the oven to 350F. Combine all the filling ingredients in a large bowl, and process in 2 batches in a blender until smooth. Combine the batches in a medium bowl, and pour into the unbaked crust. Bake for 60 minutes. Cover the edges of the pie with foil if thy begin to brown too quickly. Cool on a rack, thenrefrigerate overnight before serving. Top with soy whipped topping, if desired.
