Pumpkin Pie

Filling

2 cups canned or cooked pumpkin

1 cup non-dairy milk

3/4 cup brown sugar

1 scoop Genisoy Natural Vanilla Shake Powder (1/4

cup)

1 tablespoon molasses

1 teaspoon cinnamon

1/2 teaspoon powdered ginger

1/2 teaspoon nutmeg

1/4 teaspoon cloves

1/4 teaspoon salt

1 teaspoon vanilla extract

1 9-inch unbaked pie crust

 

Preheat the oven to 350F.

 

Combine all the filling ingredients in a large bowl, and process in 2 batches in

a blender until smooth.

 

Combine the batches in a medium bowl, and pour into the unbaked crust.

 

Bake for 60 minutes. Cover the edges of the pie with foil if thy begin to brown

too quickly.

 

Cool on a rack, thenrefrigerate overnight before serving. Top with soy whipped

topping, if desired.
