Minty Orange And Quinoa Salad

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 large oranges -- peeled,

segmented and cut into bite-size pieces

1 cup baby carrots

cut into matchstick-size piece

or sliced thin

4 stalks celery -- sliced thin

2 cups cooked quinoa or millet

OR other whole grains of your choice

1/4 cup fat-free honey mustard salad dressing

2 tablespoons fresh lemon juice -- or to taste

1/4 cup chopped fresh mint

Romaine or other lettuce leaves

 

Combine all ingredients except the lettuce leaves in a serving bowl. Serve

the salad on a bed of lettuce, or chop the lettuce and toss it with the

salad before serving.

 

Yield: 4 to 6 servings, calories: 134, fat: 1g, fiber: 4g.
