Vegetarian chopped " liver "

1 14 1/2 oz. can French style green beans -- drained

2 eggs -- hard boiled

2 medium onions -- diced

oil for sauteing onions

1/4 cup walnuts -- chopped

salt -- to taste

 

Drain green beans, pressing out as much water as possible.

 

Saute onions until browned.

 

Put all ingredients into blender or food processor, and process until smooth.

 

Salt to taste.

Serving Ideas : Great with crackers

 

NOTES : You can use egg whites only instead of whole eggs. To make this a vegan

dish, substitute fresh mushrooms for the eggs, using about the same volume as

two hard boiled eggs would be.
