spinach salad

This recipe has always been our favorite for spinach salad. I throw all the

dressing ingredients in a jar, shake and toss. The original recipe called for

bacon; you can substitute soy granules or omit all together.

Spinach Salad

1 pkg spinach leaves -- washed and dried

1 c croutons

1 c mushroom -- sliced

1 onion -- chopped fine

3 Tbsp sugar

1 tsp salt

1/2 tsp celery seeds

3 Tbsp dijon mustard

1/2 tsp pepper

1/3 c vinegar

1 c oil

 

Mix Salad dressing ingredients well. Refrigerate.

 

Salad is spinach topped with croutons and mushrooms.
