Nondairy Bechamel

1 1/2 cups soy milk

1/2 cup crumbled extra-firm silken tofu or

medium-firm regular tofu

1/2 cup water

1 soop Genisoy Natural Protein Powder

1 chicken-style vegetarian broth cube,

crumbled, or enough broth power to flavor

1 cup liquid

1/2 teaspoon salt

2 tablespoons nondairy margarine or extra-virgin olive

oil

1 1/2 to 3 tablespoons unbleached flour

large pinch freshly grated nutmeg

large pinch white pepper

 

Place the soymilk, tofu, water, protein powder, broth cube or powder, and salt

in a blender and mix until very smooth. Set aside.

 

In a medium, heavy saucepan over medium-high heat, heat the oil and whisk iin 1

1/2 tablespoons of flour, adding more if necessary to make the mixture thicker.

Whisk for a few minutes, but remove from the heat just before it starts to

change color. (You want a white roux.)

 

Add to the soymilk mixture in the blender, and process for a few seconds. Pour

the mixture back into the saucepan. Cook over medium-high heat, stirring

frequently, until the sauce thickens and boils. Reduce the temperature to low,

and simmer for a few minutes to cook thoroughly. Whisk in the nutmeg and

pepper.

 

Microwave Option: Using a large microwave-safe bowl, heat the oil in the

microwave on high for 45 seconds. Whisk in the flour and microwave on high for

2 minutes. Add to the soymilk mixture in the blender, and process briefly, then

pour the mixture back into the bowl. Microwave on high for 2 minutes. Whisk.

Microwave for 2 minutes more, then whisk again. Microwave for 2 minutes more,

and whisk in the nutmeg and pepper.
