Tofu Cream Cheeze Spread

1 12.3 oz package extra-firm silken tofu

3 1/2 tablespoons cashew or almond butter, or tahini

2 tablespoons Genisoy Natural Protein Powder

5 teaspoons lemon juice

1/2 teaspoon salt

1 teaspoon liquid sweetener (optional)

 

Place the tofu in a clean tea towel, gather the ends uo, and twist and squeeze

for a couple of minutes to extract most of the water. Crumble into a mmixing

bowl, and mix in the remaining ingredients. Process in 2 batches in a blender

or all at once in a food processor for several minutes until the mixture is very

smooth. (You may have to stop the machine and loosen the mixture with a spatula

once or twice.) Use right away or scrape it into a covered container and

refrigerate. It firms up with refrigeration.
