Hello Everyone,

I have just joined the list, and I have a question already!

I'm trying to find a recipe for rice crisps, rice cakes, rice snaps,

or whatever you call them where you live. The end product is a small

2 inch wafer of rice that has a crunch not a squish. I've found tons

of recipes for rice cakes that are the soft kind, but only one for

making the crunchy ones. The one I found says to mix water and rice

flour until you have a soft dough. Then to drop it by spoonful into

simmering water until cooked. My first problem is the only place I

found rice flour, they want $4.00 per/pound for the stuff. Get real!

Does anyone out there have a recipe for them, and where would I shop

for some rice flour at a reasonable price?

Dear Tim,

 

I am not sure if what I am about to say will be of any assistance, but being

from Hawaii we (the local people) use a product called MOCHIKO (the BLUE

STAR BRAND is the best). Mochiko is a sweet rice flour and is sold in

1-pound boxes for less then $2.00 (depending on location). You can find it

in any oriental market. I have bought some on sale for about 99¢ a box, and

sometimes you can catch them as low as 79¢ a box. Do you have an oriental

market near you?
