MangoPause Sorbet

2 1-pound mangoes -- peeled, cut from the pit, and coarsely

chopped

1/2 cup sugar

6 tablespoons water

2 tablespoons fresh lime juice

1/2 teaspoon minced lime pulp and membrane

 

In a blender or food processor, puree the mangoes. Pour the puree into a medium

bowl.

 

Mix the sugar and water in a heavy small saucepan. Stir over medium heat until

the sugar is completely dissolved. Stir the syrup into the mango puree, then

add the lime juice, pulp, and membrane and combine thoroughly.

 

Refrigerate the mango mixture for about 1 hour, or until completely chilled.

Transfer to an ice cream maker and freeze according to the manufacturer's

instructions.

 

Description:

" Look for fully ripe mangoes, plump to the touch, with a reddish blush

to the skin. This refreshing tropical dessert is lovely in hot

weather. "
