Alexander Dumas's Apricot Compote

1/2 cup water

1 cup sugar

8 ounces fresh apricots -- halved and pitted

juice of 1 orange

 

In a heavy, medium saucepan, boil the water and sugar until thickened into a

syrup, about 5 minutes. Add the apricots to the hot syrup and cook over medium

heat for 3 minutes. Remove from heat and add the orange juice. Let cool before

serving.
