Cool Vegetable Water

2 cups water

2 cups leafy greens such as Swiss chard, kale,

and spinach -- chopped

dash ground cumin

2 squeezes lemon juice

2 lemon slices

 

In a medium saucepan, bring the water to a boil. Add the greens and cook for 10

minutes. Strain, let cool, and refrigerate the liquid for 1 or 2 hours.

Reserve the greens to use as an appetizer (Marinated Tofu Cubes with Herbs,

Green Tofu Bruschetta). Serve the liquid over ice with a dash of powdered

cumin, a squeeze of lemon, and a lemon slice.
