Guest guest Posted September 17, 2000 Report Share Posted September 17, 2000 * Exported from MasterCook * Blackened Tofu Recipe By :Professional Vegetarian Cooking, Ken Bergeron Serving Size : 10 Preparation Time :0:00 Categories : ProfessionalVegetarianCooking Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 pounds extra-firm tofu -- (20 slices) MARINADE: 1/4 cup soy sauce 1 teaspoon toasted sesame oil 1 teaspoon crushed garlic 4 drops liquid smoke flavoring 1 tablespoon cornstarch BREADING MIXTURE: 2 cups fresh bread crumbs 2 teaspoons dried thyme 2 teaspoons garlic powder 2 tablespoons minced fresh parsley 4 teaspoons paprika 1/2 teaspoon salt 1/2 teaspoon black pepper 1/4 teaspoon white pepper 1/4 teaspoon cayenne pepper Rinse each block of tofu and slice across the narrow width into 10 slices. Place on paper towel to absorb excess moisture. Combine the marinade ingredients on a sheet pan, then lay the tofu slices into the marinade. Turn the slices over once or twice as needed to cover well in the marinade. Combine the breading mixture and dredge the tofu slices, coating them well. Lightly oil and preheat a griddle over high heat. Place the tofu slices on the griddle and blacken the first side, then turn slices over, reduce heat to medium, and allow the second side to blacken thoroughly.
