When served in Mexico and southern AZ, the broth is often clear (made without milk), but this varies with the region. A north-of-the-border variation is to substitute colby cheese for the jack cheese, and the tomatoes are optional. - N.B. * Exported from MasterCook * Caldo De Queso Recipe By :Chef Suzanna Davilla, Cafe Poca Cosa, Tucson, Arizona Serving Size : 6 Preparation Time :0:00 Categories : Lacto Soups & Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup vegetable oil 4 large potatoes -- unpeeled and cut -- into large chunks 1 large yellow onion -- cut into wedges 3 scallions -- finely chopped 2 cloves garlic -- roasted 6 Anaheim green chiles -- roasted, peeled, -- seeded, and cut into strips 1 1/2 tablespoons dried oregano 1 quart vegetable stock 5 large tomatoes -- roasted and chopped 1 quart whole milk 2 1/2 pounds Monterey jack cheese -- shredded salt and pepper to taste cilantro for garnish Add oil to a large soup pot and heat until medium hot. Add potatoes and cook until lightly golden. Sauté yellow onion and two-thirds of the chopped scallions with the potatoes. Add garlic, green chiles, and oregano. Drain excess oil. Add vegetable stock and bring to boil. Lightly stir in tomatoes and slowly add milk. Lower heat to a simmer and add 2 pounds of the Monterey jack cheese. Stir until cheese melts. Add salt and pepper to taste. Top each serving with remaining cheese and scallions and garnish with cilantro.
