Guest guest Posted September 15, 2000 Report Share Posted September 15, 2000 * Exported from MasterCook * Mrs. Kale Gets Steamed Recipe By :The Hotflash Cookbook - Cathy Luchetti Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 bunch green or red kale -- stemmed (reserve stems) 2 tablespoons canola oil 3 garlic cloves -- chopped 1/3 cup low-sodium vegetable stock 2 tablespoons low-sodium soy sauce 2 tablespoons plain rice vinegar 1 tablespoon grated lemon zest 1 tablespoon fresh lemon juice freshly ground pepper to taste 10 ounces soba noodles 1/4 cup slivered almonds -- toasted 2 tablespoons crumbled nori (optional) Slice the kale stems thinly and chop the leaves coarsely. Heat the oil in a large saute pan or skillet over medium heat. Saute the garlic and kale stems for 3 minutes. Add the kale leaves, broth, and soy sauce. Cover and cook until the kale is tender, about 8 minutes. Remove from heat. Add the vinegar, lemon zest and juice, and pepper and toss. Set aside and keep warm. In a large pot of boiling water, cook the noodles until tender, about 2 minutes; drain. Serve the kale on a bed of noodles and top with the almonds or nori, if desired.
