Marinated Carrots with Garlic

6 to 8 garlic cloves -- crushed

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon salt

2 tablespoons plus 1 cup water

2 tablespoons olive oil

6 carrots -- peeled and cut into 1/4-inch-thick slices (3

1/2 cups)

1/3 cup minced fresh cilantro

 

Combine the garlic, spices, and salt in a small bowl. Add the 2 tablespoons

water and mix thoroughly.

 

In a heavy, medium saucepan over medium-high heat, heat the olive oil. Add the

garlic mixture and saute about 30 seconds. Stir in the carrots and cilantro.

Pour the 1/3 cup of water over the carrots. Cover and cook over low heat for 15

to 20 minutes, or until crisp-tender. Uncover the pan and cook over high heat

until all the juices evaporate. Transfer to a bowl and let cool to room

temperature before serving.
