Nice break from pasta with red sauce. Even DH liked it. * Exported from MasterCook * Pasta with Goat Cheese, Chives & Chiles Recipe By : Adapted from Marcella Hazan Serving Size : 4 Preparation Time :0:00 Categories : Cheese Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 6 oz pkg goat cheese -- softened a bit 1/4 cup extra-virgin olive oil 2 tbsp fresh chives -- chopped 1 chile pepper -- chopped to taste salt -- to taste 1 lb dried pasta of your choice In a small bowl, combine the cheese, oil, chives, chile and salt and mix well with a fork until smooth and thoroughly combined. Cook the pasta and drain it, pouring some of the water into a serving bowl. Swirl the water around the bowl to warm it, pour out all but 1 tbsp of water. The water will help the sauce, which is rather dry to coat the pasta more uniformly. Immediately place the drained pasta in the bowl, add the goat cheese mixture and toss thoroughly to spread the sauce and coat the pasta strands well. Serve at once.
