Asparagus with Roasted Red Pepper Sauce

1 garlic bulb

1 tablespoon olive oil

4 red bell peppers -- seeded, deribbed, and chopped

1/2 teaspoon cayenne pepper

2 tablespoons soy sauce

2 tablespoons lemon juice

2 tablespoons orange juice

1 pound asparagus -- trimmed

 

Preheat the oven to 350F. Remove the papery outer husk of the garlic bulb.

Place the garlic bulb in a small casserole. Drizzle with 2 tablespoons olive

oil. Bake for about 45 minutes, or until very soft, turning the bulb once or

twice during baking. Press the garlic out of the skins to make 1/2 cup roasted

garlic. Puree the garlic in a blender or food processor and set aside.

 

Heat the oil in a large skillet over medium-high heat and saute the peppers and

cayenne for 2 minutes. Add the soy sauce and citrus juices and simmer for 2

more minutes, then transfer to blender or food processor and blend with the

garlic puree.

 

In a covered steamer or saucepan, steam the asparagus over boiling water for 2

minutes, or until crisp-tender and bright green in color. Arrange the asparagus

on a serving platter and drizzle with spirals of sauce.
