2 cups dried Anasazi beans

5 cups vegetable broth -- or water

1/4 teaspoon salt

black pepper to taste

1/4 teaspoon ground cumin

1/4 teaspoon nutmeg

NOTES : Author's Note: Thoroughly cooking beans is a simple process, but the

timing is highly variable because the moisture content in dried beans varies

widely. If you beans are old, the cooking may take longer, so cook as long as

necessary until tender.
