Guest guest Posted September 13, 2000 Report Share Posted September 13, 2000 * Exported from MasterCook * Smoky Tofu Pizza Recipe By :The Hot Flash Cookbook - Cathy Luchetti Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 1 onion -- thinly sliced 2 garlic cloves -- pressed 10 ounces portobello or other fresh mushrooms -- sliced 1 red bell pepper -- seeded, deribbed, and cut into julienne strips 1 yellow bell pepper -- seeded, deribbed, and cut into julienne strips 1 teaspoon dried rosemary -- crumbled 1/4 teaspoon dried oregano or marjoram 1/4 teaspoon dried thyme 7 ounces firm tofu -- rinsed, drained, and mashed with a fork kosher salt and freshly ground pepper to taste 1 large pizza crust or focaccia or several smaller ones 1 cup freshly grated smoked cheese (4 oz) such as smoked mozzarella Preheat the oven to 400F. Heat the oil in a large salte pan or skillet over medium-high heats. Add the onion, garlic, mushrooms, pepper, and herbs. Saute until the vegetables are tender, about 5 to 7 minutes. Add the tofu, salt, and pepper. Spread evenly on each crust or focaccia. Sprinkle with grated cheese. Bake on a pizza pan or baking sheet for 8 to 10 minutes, or until the cheese melts. If desired, place under the briler for 1 or 2 minutes, or until browned.
