Guest guest Posted September 12, 2000 Report Share Posted September 12, 2000 * Exported from MasterCook * Marinated Tofu Cubes with Herbs Recipe By :The Hot Flash Cookbook - Cathy Luchetti Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons Dijon mustard dash cayenne pepper 1 garlic clove -- halved 1/4 cup minced fresh herbs: any combination of parsley, basil, tarragon, thyme, chiives, and/or dill 1 teaspoon dried rosemary, marjoram, or oregano (or a combination) 1/4 cup oil-packed sun-dried tomatoes -- slivered 1/4 cup balsamic vinegar 1/4 cup extra-virgin olive oil kosher salt and freshly ground pepper to taste 14 ounces firm tofu -- rinsed, drained, and patted dry In a medium bowl, whisk together all the ingredients except the tofu and set aside. Cut the tofu into 1/2-inch cubes. Place in a nonaluminum container, drizzle with the marinade, cover tightly, and refrigerate overnight or up to several days. Gently shake the container occasionally to turn the tofu in the marinade.
