Marinated Tofu Cubes with Herbs

2 tablespoons Dijon mustard

dash cayenne pepper

1 garlic clove -- halved

1/4 cup minced fresh herbs: any combination of

parsley, basil, tarragon, thyme, chiives,

and/or dill

1 teaspoon dried rosemary, marjoram, or oregano (or a

combination)

1/4 cup oil-packed sun-dried tomatoes -- slivered

1/4 cup balsamic vinegar

1/4 cup extra-virgin olive oil

kosher salt and freshly ground pepper to

taste

14 ounces firm tofu -- rinsed, drained, and patted dry

 

In a medium bowl, whisk together all the ingredients except the tofu and set

aside.

 

Cut the tofu into 1/2-inch cubes. Place in a nonaluminum container, drizzle

with the marinade, cover tightly, and refrigerate overnight or up to several

days. Gently shake the container occasionally to turn the tofu in the marinade.

Serve at room temperature with tooth picks for spearing.
